Lauki Posto Bottle gourd with Poppy seeds Paste

Wash, peel off and chopped the lauki. I chopped into small pieces.
Mix the turmeric powder well with the chopped lauki in a microwave safe glass bowl. Cook in the pre-heated oven for 4 minutes.
Heat ghee in a pan. Add panch phoran and let it splutter. Add hing and chopped green chilli. Saute for 30 seconds in low flame.

Add lauki pieces and mix well. Also mix salt, red chilli powder and cumin powder, cook for a minute. Mix the poppy paste well with lauki and add a little water. Cook in low to medium flame for 3 minutes or till it's dry and done.
Lauki posto is ready to serve. Garnish with chopped coriander leaves before serving.
