A great way to eat bitter melon and the filling possibilities are endless.
Steps

Cut bitter goard into rounds. Then scoop all white pith the leave green rings.

Cut sweet potato into chunks (peeled), and steam for 15 minutes until fully cooked.
- 3
Blanche the bitter melon in water with salt and vinegar for 3 minutes to partially cook and keep green colour.
- 4
Mash sweet potato and other ingredients in a bowl along with finely chopped thai chilli and coriander.
- 5
Stuff potato mixture into the hollow centre of the bitter melon rounds.
- 6
Fry in a generous amount of oil until golden brown on both sides.
- 7
Serve with sriracha!
