Vada Pav Fondue is fusion of two classic recipes, vada PAV-an indian savoury & Fondue- a Swiss sauce which is used as a dip..where mini pavs/burger buns are stuffed with spicy potato filling & served with fondue
Vada pav is a famous street food of Maharashtra, which is favourite of every Mumbai wala.
It is made by first making aloo vada, a deep fried patty/tikki. Aloo vada is a masala made using boiled potatoes, tempered with indian spices and coated with gram flour/besan batter and is deep fried.
Fondue means any meals which is served in pot filled with some hot liquid, into which you dip food, fruits or breads with so long fork

Steps

Heat oil in a wide pan over medium flame.

Once hot add in mustard seeds and let them splutter for few seconds. Add whole coriander seeds. Add in the curry leaves and sauté for 30 seconds.

Then add Ginger garlic & green chilli paste and sauté for 2 minutes on medium heat.
Add turmeric powder and saute for another minute. - 4
Then add in the mashed potatoes, red chilli poweder & salt to taste and mix well.

Cook for 2 more minutes. Add chopped fresh coriander leaves & lemon juice in the end.
Remove from heat and let the potato mixture cool completely. - 6
To make Fondue sauce :
In a pan put oil and butter.
Next add Besan atta - 7
Bhuno it on slow flame so there is no colour change.Bhuno it till nice aroma comes out from besan.

Add Green chill and chopped Spring onions.
Next add curfew to make fondue sauce. Use whisker so that no lumps remain and sauce should be silky smooth.

Add chopped fresh coriander leaves.

Fondue sauce is ready. Garnish with coriander.

Slice open a soft and fluffy pav. Fill in Vada masala inside it.

Make vertical and horizontal cuts and from each pav make 6 pieces.Saute all pieces in butter

Dunk masala pav pieces into hot Fondue and enjoy.
