Ingredients

  1. 1 cuprice
  2. 2 cupswater
  3. Dalma
  4. 1 cupmoong dal
  5. 1medium potato roughly chopped
  6. 8-10 piecesbeans roughly chopped
  7. 1small raw papaya roughly chopped
  8. 4small brinjals roughly chopped
  9. 2medium sized tomatoes roughly chopped
  10. 4.5 cupswater
  11. 1/2 tspTurmeric powder
  12. 2green chillies
  13. To tasteSalt
  14. 1 tspoil
  15. Dalma tempering
  16. 1 tsppanch phoron
  17. 3-4dry red chillies
  18. 1 tspoil
  19. Powder for dalma
  20. 1 tspjeera seeds
  21. 3-4cinnamon sticks
  22. 8-9black pepper
  23. 4dry red chillies
  24. Tomato khatta
  25. 5-6medium sized tomatoes roughly chopped
  26. 2Green chillies slits
  27. 1 sprigcurry leaves
  28. 1 tspmustard seeds
  29. 1 inchginger roughly chopped
  30. 3/4 tspjaggery liquid
  31. To tasteSalt
  32. 1 tspoil
  33. Aloo bhaja
  34. 2medium sized potatoes thinly sliced
  35. 1 tspJeera seeds
  36. 1/4 tspTurmeric powder
  37. 1/2 tspoil
  38. To tasteSalt
  39. As neededArancini
  40. As neededOil for deep frying
  41. As neededBread crumbs
  42. 1 tspcorn flour
  43. 2papad

Steps

    Cook rice & let it cool.

    Dalma- Drizzle oil to pan & add the veggies in the order of the ingredients list & sauté for 5mins.

    In a pressure cooker add dal after oil is heated, sauté it for 5mins then add water,turmeric powder and salt as per taste & cover the lid until the water boils. Add in the potatoes, papaya, beans & pressure cook for 10mins. Then add the sautéed tomatoes and brinjal for 10mins/ until 2 whistles. Turn off flame & let it cool. For tempering, add the ingredients under the ingredients list and add dalma to it.

    Dry roast dalma powder ingredients, grind it and add dalma & give it a mix.

    Aloo bhaja- Take a pan add oil to it, jeera seeds and let it splutter. Add the potatoes, turmeric powder and salt as per taste and give it a mix. Cover and cook until the potatoes are done.

    Tomato khatta- Take a pan, add oil to it and let it heat. Add mustard seeds to it and let it crackle. Add curry leaves and green chillies and ginger. After few mins, add the tomatoes with a bit of salt and cover to cook. After the tomatoes become mushy, add the jaggery & cook for 5-8mins on low flame. Then turn off the flame and let it cool.

    For making arancini, take a bowl add two part rice and 1 part dalma. Mix these two and keep in fridge for 15-30mins.

    Make a ball of the mixture and make a hole in it to add aloo bhaja and close the hole. Now dip the ball in corn flour slurry(1 part corn flour mixed with 4 parts water) then coat the ball with bread crumbs.Make sure you are doing double coats of layering. While you are doing this,heat oil for deep frying. Add the balls to fry untill it’s golden brown and then remove it. Repeat this step with as many balls you want to make. Lastly, fry 2 pieces of papads which we will need in garnishing.
