If you love egg dishes, try combining eggs with ground meat to make these egg dumplings. They can be served as a main dish, and this version is shaped more like potstickers. Steaming them after pan-frying reduces the fat while keeping all the flavor. They’re truly delicious!

If you love egg dishes, try combining eggs with ground meat to make these egg dumplings. They can be served as a main dish, and this version is shaped more like potstickers. Steaming them after pan-frying reduces the fat while keeping all the flavor. They’re truly delicious!

In a bowl, combine the ground meat with 1/3 teaspoon salt, a pinch of black pepper, a pinch of five-spice powder (about 2 to 3 shakes), 1 teaspoon sugar, 1 tablespoon soy sauce, grated ginger, chopped green onion, 1 teaspoon sesame oil, and 1 teaspoon rice wine. Mix thoroughly until well combined, then divide into 10 portions and set aside.

Beat 2 eggs with 1 tablespoon milk and 1/4 teaspoon salt until well mixed. Set aside.

(I use an electric griddle, but a regular nonstick skillet works too.) Heat the pan over high heat, add a little oil, then reduce to medium-low. Pour in 1 tablespoon of the egg mixture and add one portion of the meat filling.

Before the egg is fully set, roll up the filling in the egg. Lightly pan-fry both sides until golden brown.

This recipe makes about 10 dumplings. The filling will not be fully cooked yet; only the egg wrapper will be cooked. Place the pan-fried egg dumplings on a plate.

Add 1 cup of water to an electric steamer and turn it on. Once steam appears, place the egg dumplings inside and steam for 12 minutes. When steaming, leave a small gap in the lid using a chopstick; do not cover completely.

Serve the delicious steamed egg dumplings hot!

Mrs. Chen’s Tips:
1. I use a temperature-controlled griddle set to 356°F (180°C) and just a thin layer of oil for beautiful results.
