Sambal dabu-dabu, is a fresh and fiery chili sauce from Manado, the provincial capital of North Sulawesi. Made form tomatoes, chilies, shallots, and lime juice, this sambal dabu-dabu is sure to whet up the appetite.

It is usually used as a condiment for seafoods, especially various recipes of ikan bakar (grilled fish).
Dabu-dabu has a flavor similar to Mexican salsa.  It is sometimes described as Manado's raw sambal.
But you can use any type of dish you like to serve with this sambal dabu-dabu.
And I use fried chicken for my lunch 😍👍.

Ingredients

  • 1large tomatoes
  • 1large shallot
  • 11bird's eye chilli
  • 1 tablespoonlime juice
  • 1 tablespoonsugar
  • 1 teaspoonsalt
  • 2-3 pieceskaffir lime leaves (thinly sliced)
  • 1bounch of lemon basil leaves
  • 3-4 tablespoonoil (new oil or used oil)

Steps

  1. 1

    Diced tomatoes, shallots, and chilies (you can remove the seeds to reduce the level of spiciness) into small pieces and place in a mixing bowl.
    Drizzle with the juice of lime and sprinkle with salt and sugar.
    Gently fold everything together with a spoon. Add lemon basil leaves.

  2. 2

    Heat the cooking oil. If it is hot, pour the cooking oil into the dabu dabu sambal. Stir well. And ready to be served along with other dishes you like

  3. 3

    Cooking oil that is used, can be new oil or used oil to fry fish.
