White rice/egg stew

Start by parboiling the rice.rinse and cook till soft.set aside.

Wash all the ingredients for.the soup.dice the tomatoes, slice the onions.

In a large pan add the vegetable oil.once hot add in the onion and ginger garlic pastes and fry till translucent. Add the tomatoes, salt seasoning cubes, curry and thyme.stir and cook till oil is visible on the top.crack the eggs and beat then reduce the heat to low. Pour in the beaten eggs and allow to seat for few seconds before turning. Cook till eggs are fully cooked.serve with the white rice. Enjoy!
