Microwaved Eggplant & Tuna (Sweet Miso)

My ‘Sweet Miso Eggplant Don’ is usually made with Pork Mince, but it can be made with Chicken Mince, Beef Mince, Tofu OR Canned Tuna. On the other day when I wanted to eat it for lunch but I didn’t bother cooking it just for myself, I did an experiment. I microwaved everything together… Oh, my! It worked! It’s so easy! It’s so yummy!

Steps
- 1
Place all ingredients except Sesame Seeds in a large heat-proof bowl and mix well. Do not discard the Oil in the Tuna as the oil is essential. Adjust the amount of Sugar depending on the flavour and saltiness of Miso you use.
- 2
Cover with a large plate or heat-proof wrap, cook in the microwave on high power for 3 minutes, toss it over and cook for 2 more minutes. Toss over again, carefully because it must be very hot at this stage, and cook 1 more minute. Let them rest for a few minutes so that the remaining heat will cook all through.
- 3
Enjoy it with freshly cooked rice.
