Herby Slow Cooker Chicken Stew

This is one of my standard go to recipes for when I'm making a chicken stew in my slow cooker. If you don't have a slow cooker you can also cook it low and slow in a large saucepan on the hob with a lid on.

Herby Slow Cooker Chicken Stew

To the slow cooker (or large saucepan), add the chicken in first, followed by the stock cube (crumbled), dried spices, salt and pepper.

Then add the gravy granules, garlic and veggies. Pour over the water.

Leave to slow cook for 5-7 hours on a low heat. Check on it now and then and give it a stir.

When the chicken is really tender, remove any bones that have come out from the thighs, (if using meat with bones in). Gently stir the stew and break up any larger chunks of chicken into bite sized pieces.

At the end of cooking, around 15-20 minutes before serving stir through the cornflour mix to thicken the gravy. Garnish with a sprinkling of fresh parsley leaves once served.

Great served alone or with some fresh crusty bread and butter. :)

TBH I was nervous about only putting 200ml of water in as this seemed too little so I doubled this quantity. When I layered the ingredients as per the recipe I found that the baby potatoes and swede were still firm at the end of cooking time so I took them out and microwaved them for 5 mins or so and re-added.
Do you think I should put the potatoes and swede in first next time I try?
