Ingredients

5-7 hours
2-3 servings
  • 5-6chicken thighs, skin and fat trimmed off,
  • 8-10new potatoes, or 5 diced Maris piper,
  • 1medium leek, chopped into rings,
  • 1small Swede, chopped,
  • 2medium-large carrots, sliced into rings
  • 1red or white onion, sliced into chunks,
  • 1 stickcelery, sliced,
  • Salt and pepper to season,
  • 1reduced salt chicken stock cube,
  • 4heaped tsp chicken gravy granules,
  • 1.5level tsp garlic granules,
  • 2 tspdried mixed Italian herbs,
  • 1/2 tspdried rosemary, or a couple of sprigs of fresh,
  • 3/4mug of water, (around 200ml),
  • 1 tbspcornflour, mixed with 2 tbsp cold water until smooth,
  • Garnish:
  • Fresh parsley leaves (optional)
  • To serve:
  • Fresh buttered bread (optional)

Steps

5-7 hours
  1. 1

    To the slow cooker (or large saucepan), add the chicken in first, followed by the stock cube (crumbled), dried spices, salt and pepper.

  2. 2

    Then add the gravy granules, garlic and veggies. Pour over the water.

  3. 3

    Leave to slow cook for 5-7 hours on a low heat. Check on it now and then and give it a stir.

  4. 4

    When the chicken is really tender, remove any bones that have come out from the thighs, (if using meat with bones in). Gently stir the stew and break up any larger chunks of chicken into bite sized pieces.

  5. 5

    At the end of cooking, around 15-20 minutes before serving stir through the cornflour mix to thicken the gravy. Garnish with a sprinkling of fresh parsley leaves once served.

  6. 6

    Great served alone or with some fresh crusty bread and butter. :)

Hello NatalieThanks for the share. I made this recipie a few days ago.
TBH I was nervous about only putting 200ml of water in as this seemed too little so I doubled this quantity. When I layered the ingredients as per the recipe I found that the baby potatoes and swede were still firm at the end of cooking time so I took them out and microwaved them for 5 mins or so and re-added.
Do you think I should put the potatoes and swede in first next time I try?
BTW It was very tasty when I dished it up 😋Kind regards
