Ingredients: 1 medium Eggplant *about 300g, cut into small pieces; 1 (about 100g) Canned Tuna in Oil (Canola OR Olive Oil) *DO NOT drain; 1 teaspoon Sesame Oil for flavour *optional; 1 tablespoon Sugar; 1 tablespoon Mirin; 2 tablespoons Soy Sauce; 1-2 teaspoons grated Ginger; Chilli Flakes *as required

Since I discovered the easiest & the quickest way to cook Eggplant, I am using Microwave for cooking more often. This is an almost identical recipe to ‘Microwaved Eggplant & Tuna (Sweet Miso)’ but in a different flavour. And again, what you have to do is microwaving everything together. Nothing can be easier than this!

1medium Eggplant *about 300g, cut into small pieces
1(about 100g) Canned Tuna in Oil (Canola OR Olive Oil) *DO NOT drain
1 teaspoonSesame Oil for flavour *optional
1 tablespoonSugar
1 tablespoonMirin
2 tablespoonsSoy Sauce
1-2 teaspoonsgrated Ginger
Chilli Flakes *as required

Steps

Place all ingredients in a large heat-proof bowl and mix well. Do not discard the Oil in the Tuna as the oil is essential.

Cover with a large plate or heat-proof wrap, cook in the microwave on high power for 3 minutes, toss it over and cook for 2 more minutes. Toss over again, carefully because it must be very hot at this stage, and cook 1 more minute. Let them rest for a few minutes so that the remaining heat will cook all through.

Enjoy it with freshly cooked rice.
