To make basic cranberry sauce with just sugar and water: Rinse the cranberries and remove any that are damaged or spoiled. In a saucepan, combine 2 cups of water with the sugar over low heat, stirring occasionally. Bring to a boil for about 5 minutes. Add the cranberries and continue boiling, stirring constantly.

To make cranberry sauce with ginger: Rinse the cranberries and remove any that are damaged or spoiled. In a saucepan, combine the sugar, orange juice, cinnamon, ginger, cloves, and cranberries. Bring to a boil over medium-high heat, then reduce the heat and cook for 12 minutes or until the cranberries burst. Remove from heat, stir in the orange zest, and let cool before serving.
