Heat oil in fry pan and add chiles and onion. Cook until almost golden brown.

Using your hands take each potatoe and smoosh it and add to the pan with onions and chiles. Add salt to taste, using a flipping motion turn the potatoes every couple minutes until golden brown.

Heat up a flour tortilla, add a scoop of potatoe mixture, a couple halves of egg and chipotle chilé. Fold into a burrito and heat on stove until slightly crunchy on the outside.
