Wash the brinjal thoroughly. Place it on stove directly. Let the skin churns.take oil in a frying pan. Add cumin & corriander seeds in pan. Splutter. Then add finely choped onions in pan. Fry to pink

Beat dahi. Add red chilli powder, salt, haldi, ginger garlic paste in dahi and mix well. When onion is turned to pink or translucent add dahi to pan.let masal cook on low heat.

When brinjal is churned out. Take thm off stove. Peel the churned skin while its hot, it will be easy to peel hot.(aftr getting cold the skin sticks to flash inside). Mash the flash to paste.add it to pan in masala. Mix well. Let it cook on medium heat.

When the moisture is reduced and oil seprates out. Turn off heat. Garnish with mint leaves and ginger julians. Serve either with chapati or boil rice. Enjoy
