This is one of my favourite natural flavour enhancers (there is no MSG in my kitchen!) from one of my paleo cook books, Well Fed. Really delicious sprinkled over curries and roasted veg.

This is one of my favourite natural flavour enhancers (there is no MSG in my kitchen!) from one of my paleo cook books, Well Fed. Really delicious sprinkled over curries and roasted veg.

Fry the onions and garlic in the coconut oil for a few minutes. Then add the ground spices and salt. Fry for 5 more minutes then add the coconut flakes and stir to coat them with the spices.

Tip the mix onto a baking tray lined with parchment paper.

Bake at 150 C for 30 mins. Then add the nuts, stir and bake for another 10-15 mins until your coconut is deeply toasted and your nuts are lightly toasted.

Allow to cook completely then pulse blend in a mixer until it’s a coarse texture - not too fine. Store in an airtight container and sprinkle on your food.
