Ingredients

  • 1/2onion, very finely diced
  • 1large cloves garlic, crushed
  • 1 tbspcoconut oil
  • 1/2 tspturmeric
  • 1/2 tspground ginger
  • 1/2 tspcumin
  • 1/2 tspcoriander
  • 1/2 tspsalt
  • 1/2 tbsplemon juice
  • 3/4 cupcoconut flakes
  • 1/2 cuproasted almonds
  • 1/3 cupraw peanuts

Steps

  1. 1

    Fry the onions and garlic in the coconut oil for a few minutes. Then add the ground spices and salt. Fry for 5 more minutes then add the coconut flakes and stir to coat them with the spices.

    Tip the mix onto a baking tray lined with parchment paper.

    Bake at 150 C for 30 mins. Then add the nuts, stir and bake for another 10-15 mins until your coconut is deeply toasted and your nuts are lightly toasted.

    Allow to cook completely then pulse blend in a mixer until it’s a coarse texture - not too fine. Store in an airtight container and sprinkle on your food.
