Ingredients

Serves 6 servin
  • 6medium or 8 small potatoes (I prefer golden) sliced
  • 1/2onion - chopped
  • 3garlic cloves
  • 6-8 TablespoonsButter
  • Virgin Olive Oil
  • Fresh Basil, Chives,, Thyme, & Rosemary-chopped
  • 1 CupHeavy Cream
  • to taste Salt & Pepper
  • 1& 1/2 to 2 Cups Sharp Cheddar Cheese
  • 2 packagesPolsa Kielbasa-sliced & cooked
  • Parsley
  • Bacon crumbles
  • 1 canCream of chicken soup or broth

Steps

  1. 1

    Wash & chop/cut herbs, onion, garlic

  2. 2

    Peel and slice potatoes. Wash again

  3. 3

    Mix oil, basil,rosemary, thyme, half garlic...minced, salt & pepper in a 1 gallon ziplock baggie.

  4. 4

    Add potato slices. Shake and saturate the potatoes.

  5. 5

    Preheat oven to 450°

  6. 6

    Place potatoes in a single layer on cookie sheets. Cook 5 minutes. Flip over and cook 5 more minutes.

  7. 7

    Grate cheese & slice polsa Kielbasa into half inch slices.

  8. 8

    In a large casserole dish mix potatoes and all remaining ingredients.

  9. 9

    Cover and cook at 450° for 20 minutes

  10. 10

    Remove cover. Stir and top with shredded cheese, parsley, & bacon

  11. 11

    Cook uncovered for 15 to 20 more minutes.

    Makes enough to feed a small army (or 3 teenage boys)

    NOTE: I like to brown the cut sausage in a frying pan. It's good either way.
