Caribbean Rice

This rice has a unique taste. People can never guess how its made till you tell them. Not jollof and not fried rice.
A friend of mine just gave birth and wants me to make this for the naming. I made it for her the last time she gave birth and 4 people came to my house to ask if i have more because the one at the naming finished. Her husband also came to tell me he wasnt around but he heard one special rice was made (he wasnt happy they didnt keep for him 😂)

Cook the rice until almost done but not cooked completely. This is very important. When its about 80 percent cooked, strain it, pour cold water and leave in a rice strainer (or sieve)

Prepare the vegetables.

Peel and cut the plantain into bite size cubes. Fry it and keep aside.

Cube the beef, season it, cook it, fry it keep it aside and save the stock.

Measure out 2 tablespoons of browning and pour on your rice. Turn it untill all the rice is coated.

In a clean pot, put a cooking spoon of oil in the pot, slice some onions and fry lightly. Put in the vegetables and stir fry for about 30 seconds. Pour in the meat stock, plantain and fried cubed meat then add seasoning cubes and pour in the brown rice, stir and cover the pot. When cooked, sprinkle some spring onions and take off the heat.
