Soak cowpeas overnight, wash and discard water, add to pressure cooker, pressure cook at 2 whistles, depressurise and retain the boiled water for further use, retain few boiled cowpeas for garnish

Add to blender, add tahini paste, cumin powder, cayenne powder, olive oil, cowpeas boiled water, salt, garlic cloves and blend smooth

Plate adding olive oil, boiled cowpeas, chopped herbs and enjoy on a toasted sourdough slice
Tips
Soak cowpeas overnight for a better result
