Rinse and clean the catfish slices. Marinate the fish with 1 teaspoon fish sauce and black pepper to let the flavors absorb and firm up the fish. Slice all the vegetables, elephant ear stem, and tomatoes thinly and set aside.

Bring water to a boil. Dissolve tamarind in the boiling water, then season with fish sauce and salt to taste. Gradually add the vegetables, then finally add the fish. Stir gently and let it simmer for a few minutes. Turn off the heat and top with scallions, rice paddy herb, and chili peppers.
