Cut and wash Brinjals. Fry brinjal from both sides in pan by using oil. When all batch of brinjal fried set aside.

Heat up oil in a pan add garlic mince slightly fry add add all spices (chilli powder, turmeric powder, dhaniya powder, cumin seeds powder, chaat msala and salt) cook well by using little water when required. When oil oozes out turn off flame.

Layering time🧭 first layer of prepared masala (light layer or heavy masala layer up to you). Then set fried brinjal layer pour some yogurt and again set brinjal layaer.

Add all masala on brinjal layer then pour all yogurt on top. For Tardka: heat up oil with cumin seed when it's jumping 🤭 pour it on top of yogurt. Sprinkle some fresh leaves of coriander.
