Cut the mackerel into desired size, remove the innards, wash and keep in a strainer for all the water to strain out. Place on a kitchen towel to dry. Its very important the fish is not wet.

Sieve the flour, add the ginger, paprika or yaji, salt and seasoning cube (maggi, royco or knorr) to the flour
- 3
Place a pot of oil on the fire and let it get hot then roll the fish in the seasoned flour before placing it gently into the hot oil. Once fried, remove from the oil and let cool for a little bit before serving.
