Heat the water in a large pot with the chicken carcass. Wash and peel the vegetables. Skim off any foam that rises as the water begins to boil.

Once no more foam appears, add the vegetables and salt. Cover, reduce to low heat, and simmer for 1 1/2 hours.

Strain the broth. It's ready to use, or you can store it in the refrigerator or freezer.
