Decide to cook a meal using locally sourced ingredients, including herbs from the garden- ended up with local trout and roasted vegetables.
Cooking Instructions

Heat oven to 180 degrees c
- 2
Chop vegetables and place on ovenproof tray. Season with olive oil and salt and pepper (I added s little chilli too)
- 3
Clean fish and fill cavity with mixed herbs. Rub with olive oil or butter and seasoning. Wrap in foil.

Place fish on a tray and bake both fish and vegetables in the oven for approx. 30mins. ( depends on size of the fish. Rest for 5 minutes and serve. Note: this dish contains fish bones.

Another easy recipe and so easy to cook. I don't usually use an exact measurement for the ingredients I use, as cliche as it sounds I am measuring with my heart lol! So trial and error is the way to go but in my opinion you'll hardly go wrong with this. For this recipe I uses abit more ingredients other than Italian herbs for abit more flavor but really all you really need is the Mixed Italian Herbs by McCormick for that wonderful flavor, anything else is just extra. As for the vegetables I steamed it in the microwave, it's so quick and easy and it retain all the goodness of the veges as opposed to boiling it in water where you loses all the nutrition, it tastes better too.
