It's a treat to find fresh garden loofah—so delicious and sweet. While loofah soup with crab and jute leaves is amazing, my family requested it stir-fried with glass noodles and wood ear mushrooms, so that's what I made.

It's a treat to find fresh garden loofah—so delicious and sweet. While loofah soup with crab and jute leaves is amazing, my family requested it stir-fried with glass noodles and wood ear mushrooms, so that's what I made.

Soak the wood ear mushrooms and glass noodles in water until soft. Peel the loofah and slice it diagonally as you like.

Heat oil in a pan and sauté green onions until fragrant. Add the loofah and season to taste. When the loofah turns translucent and is cooked through, add the glass noodles and wood ear mushrooms. Stir well, then sprinkle with pepper and chopped green onions and cilantro.
