Beat the egg. Add salt, black pepper, and cayenne pepper to the flour to taste.

Dredge the beef medallions in the seasoned flour, making sure to coat all sides well.

Dip them in the beaten egg.

Coat them with breadcrumbs.

Fry on both sides until golden brown.

Place on a rack to drain excess oil.
