
Vegetable, Lemongrass and Ginger Soup

Dice/chop vegetables roughly. Fry onions in olive oil until soft. Add chopped vegetables and fry gently for a few minutes. Add the vegetable stock, lemongrass and grated ginger.

Cook until vegetables are soft. Add salt to taste. Remove lemongrass. Squeeze the lime into the soup before serving.
