Firstly peel wash and dice the brinjals or greae the brinjals with oil and roast it directly on stove on low flame. Then peel off the skinand mash the brinjal pulp with A masher and keep aside.

Now make rough ginger garlic paste with A mortar. Then chop the onions tomatoes and green chilli finely. Take A deep pan heat oil and add the gingergarlic paste. Aftee 30 seconds add onions and cook them on low flame until golden brown

Now add the tomatoes and chilli sprinkle salt, turmeric and red chilli mix well and let the tomatoes cook. It should appear as shown in the pic below nice red colour now add the mashed brinjals mix well and then with the help of A masher mash little more so that brinjals and gravy / spices blend well. Sprinkle.some more salt as required and garam masala powder cover the vessel and cook on lowest flame for 3 - 4minutes. Garmish with fresh coriander leaves.

For bajra roti. Take 2 cups bajra flour in A big bowl add salt and knead A little soft dough with hands by adding little water as required.

Now Take some bajra dough in your hand and place on the palm spreading the dough by pressing with fingers and try to give it A shape of roti. Place it on the hot tavA and roast it on low to medium flame from.both the sides. Apply ghee on this roti and serve hot with baingan ka barthA and raw onions.
