Finely chop the onion, squeeze out the juice, and set the juice aside in a separate bowl.

Mix all the ingredients together. Shape the mixture into kofta around wooden or stainless steel skewers. Brush with the onion juice and let rest in the refrigerator for 1 hour before grilling.

Preheat the grill and brush the grate with a little oil to prevent sticking. Place the skewers on the grill. If you don't have a grill, place the kofta on a baking sheet and bake in the oven for 20 minutes in either case.

Light a piece of charcoal. Once the kofta is cooked, place it on a piece of aluminum foil, add a few drops of oil on top, then cover for 1 minute to give the kofta a smoky grilled flavor.
