KULKUL

When searching for vegetarian Goan delicacies, got many dishes which are unknown to me. At last my choice goes on to Kulkul - a traditional Christmas sweet made of all purpose flour. Kulkuls which pronounced as 'Kalkal' & also known as 'Kidyo' are an integral part of ' Kuswar ' ( tray filled with traditional Christmas goodies ) which are served when friends and family visit during Christmas. There are slight variations in the recipes of kulkuls depending on whether you like it crunchy, crunchy and soft, with or without glaze, frosted or lightly dusted with sugar powder.
Here I chose a simple & eggless recipe & replaced all purpose flour & coconut milk with regular milk.

Ingredients

45 minutes
2 persons
  • 1 cupwheat flour
  • 1/8 cuppowdered sugar
  • 1.5 tbspbutter
  • 1/3 cupmilk
  • to tasteSalt
  • As neededOil for frying

Steps

45 minutes
  1. 1

    Mix flour,salt and sugar, then add butter in it & rub it with flour & crumble it. Now add milk little by little.

    Knead a pliable soft dough, if needed add extra milk. Cover it & keep it aside for 15 minutes.

    Divide the dough in marble size & roll it round & keep it ready in plate?

    Now grease fork with butter,take one ball of dough & place it on the back side of fork & gently flatten thin, then roll it as shown in picture.

    You can see the fork design on it. Repeat & complete all the balls & prepare the Kulkuls.

    Then heat oil & fry the kulkuls on medium to slow flame till they become golden brown. Flip it in between while frying.

    Once they cool down completely they become crispy, store it in air tight container.
