Ingredients

15 mins
1-2 servings
  1. 250 gday old cooked rice,
  2. 150 gcooked king prawns,
  3. 1large egg, beaten,
  4. 2finely chopped spring onions, whites & greens separated,
  5. 1/4large red chilli, seeds left in, sliced very finely,
  6. 1/2 tbsplight soy sauce,
  7. 1/2 tbspoyster sauce,
  8. 1.5 tspfish sauce,
  9. 1 tspmsg (optional),
  10. 1 pinchwhite pepper,
  11. 1/2 tbspvegetable oil for frying

Steps

  1. 1

    Heat a wok up over a high heat. Add the oil. Once hot add in the beaten egg. Leave to sit in the wok for around 20-30 seconds until it begins to solidify then break it up into small pieces then scrape to one side of the wok. Add in the whites of the onions plus the chilli. Fry for a few seconds.

  2. 2

    Add in the prawns. Cook until the water that's released from the prawns evaporates off. Add the msg and white pepper, stir fry with the prawns for a few more seconds. Next add the oyster sauce. Stir to coat the prawns.

  3. 3

    Now add the cooked rice, soy sauce and fish sauce. Break the rice up in the wok and toss everything together. Fry for around 2-3 minutes until the rice grains are 'popping' in the wok and there's little moisture remaining in the rice. Lastly add the greens of the spring onion. Fry until wilted then serve up and enjoy! :)
