  1. 250 gBlood Cockle
  2. 3 clovesgarlic
  3. 4shallot
  4. 3cayenne pepper
  5. 2bay leaf
  6. 2kaffir lime leaf
  7. 1 inchgalangal (bruised)
  8. 1 inchginger (bruised)
  9. 1 stalklemongrass (bruised)
  10. 1/4onion
  11. 2 Tbspchili sauce
  12. 2 Tbspketchup
  13. 1 Tbspoyster sauce
  14. 1 Tspsweet soy sauce
  15. 1 Tspsalt
  16. 100 mlwater

Steps

  1. 1

    Clean and brush the shell. Soak blood cockle in the water with salt (1/2 tsp) and lime juice (1/2 tsp). Soak for 1 hour.

    In the pot, boil clams and bay leaf for 20 minutes. Strain the clam and set aside.

    Toss garlic, shallot, and cayenne pepper to blender.

    Heat 1 tbsp oil on skillet and saute the sauce, bay leaf, kaffir lime leaf, lemongrass, galangal, ginger and onion. Saute until fragrant. Add water, kethup, chili sauce, sweet soy sauce, oyster sauce and salt. Mix it well

    Add the clam in and cook for 10 minutes.
