Cut the eggplant from center in 2 pieces & make cuts in diamond shape

Then put eggplant in water add little salt in it. Pour for 10 mins

Heat a pan & add oil & then remove eggplant from water and sprinkle little bit salt on eggplant at cuts sides and put this side in pan for fry. Heat should be low.

When this side should be golden brown change the of eggplant.

Now sprinkle all dry masalas one by one on each piece.

Now add water in pan & cover it & cook for 5-7 mins.

When water removes & oil comes now eggplant ready to serve. Remaining oil in pan put on eggplant.
