Ingredients

  1. Packchopped cherry tomatoes
  2. Chopped mushrooms
  3. Chopped courgette
  4. Pasta
  5. Creme fraiche
  6. Small amount of cooking water from pasta
  7. 1lemon
  8. Seasoning
  9. Garlic
  10. Peas optional add in
  11. Wilted spinach optional add in

Steps

  1. 1

    Fry garlic, courgette, mushrooms and cherry tomatows

  2. 2

    Optional to add fresh parsley into fried mix

  3. 3

    Cook pasta al dente

  4. 4

    Strain pasta leaving small amount of cooking water in pot

  5. 5

    Mix pasta, fried veg together in pot

  6. 6

    Add enough creme fraiche to cover pasta

  7. 7

    Squeeze lemon over to taste

  8. 8

    Season with salt and black pepper to taste
