Ingredients

  • Packchopped cherry tomatoes
  • Chopped mushrooms
  • Chopped courgette
  • Pasta
  • Creme fraiche
  • Small amount of cooking water from pasta
  • 1lemon
  • Seasoning
  • Garlic
  • Peas optional add in
  • Wilted spinach optional add in

Steps

  1. 1

    Fry garlic, courgette, mushrooms and cherry tomatows

  2. 2

    Optional to add fresh parsley into fried mix

  3. 3

    Cook pasta al dente

  4. 4

    Strain pasta leaving small amount of cooking water in pot

  5. 5

    Mix pasta, fried veg together in pot

  6. 6

    Add enough creme fraiche to cover pasta

  7. 7

    Squeeze lemon over to taste

  8. 8

    Season with salt and black pepper to taste
