Carrot Halwa

Steps

Take 2 big Delhi carrots.

Grate carrots.

Take a non-stick pan. Add 2 teaspoons of ghee.

Fry almonds, cashews & pistachios.

Add the grated carrots and fry along with nuts in the ghee. Cover the lid and keep in slow fire for five minutes. Keep opening then and then to saute the grated carrots.

Now the raw smell of the grated carrots will go away. Now to cook the carrots adding 25 ml of milk initially.

Keep gently keep stirring to avoid mashing of the grated shreds of the carrots.

When the grated carrots with milk thickens add rest of the milk and allow it to cook till all the grated carrots observe all the milk.

Now the grated carrots must have observed all the milk and cooked well.

Add again 2 teaspoons of Ghee and gently mix well.

The grated carrots will now get almost a glossy appearance.

Add 25 grams of sweetened Khoya by crumbling it. Stir gently to mix all the khoya with the grated carrots.

After sweetened Khoya is thoroughly mixed, add 2 teaspoons of Sugar. The sugar will now melt. Wait for all the grated carrots, crumbled. khoya and sugar to come to a Halwa like consistency.

When well mixed add the remaining ghee and add cardamom powder and put off fire.

Your delicious carrot halwa is ready.

Note: you can also add unsweetened Khoya and increase the quantity of Sugar as per your requirement.
