Cook the rice noodles, but remove them from the heat 5 minutes before they are fully cooked (they will finish cooking in the skillet). Drain them.

Peel and slice the carrot into thin strips.

Cut the chicken breasts into small cubes. Thinly slice the onion, garlic, and green onion tops.

In a hot, lightly oiled skillet, add the chicken, vegetables, brown sugar, salt, pepper, and ground ginger. Cook over high heat for 5 minutes, stirring. Lower the heat, cover, and cook for another 10 minutes.

Transfer the chicken and vegetables to a large bowl.

In the same skillet, scramble the eggs and add them to the bowl.

In a small bowl, mix the peanut butter, oyster sauce, and cold water until smooth.

Add the rice noodles to the skillet over low heat. Pour in the sauce and stir regularly. Once the noodles are browned, add the chicken and vegetable mixture. Stir again, cover, and cook over low heat for 5 minutes.

Roughly chop some peanuts and slice some green onion tops. Sprinkle them over the noodles on your plate as a garnish.
