Coat the veal paupiettes in flour on a plate. Slice the onion. In a pressure cooker or Instant Pot, heat a little oil and brown the paupiettes and onion. Once browned, add the white wine, tomato sauce, mushrooms, and olives.

Season with salt and pepper. Cook under pressure for 20 minutes.

Serve with pasta.
