Steps

Make slits on the eggplants. Rub it with turmeric and salt.

Heat oil in a pan. Shallow fry the eggplants until golden brown. Keep them aside.

In the same pan, add the dried red chillies. Saute and add the ginger garlic paste. Saute until the raw smell goes.

Add the onion paste. Saute.

Add cumin powder, coriander powder, red chilli powder and turmeric powder. Mix everything well.

Now add the curd. Add salt as per taste.

Add sugar and mix it.

Add little water and let it come to a boil.

Now add the fried eggplants. Let it soak the gravy and cook for some minute.

Garnish it with coriander and have it with a hot plate of rice.
