Ingredients

30 mins
2-3 servings
  • 1 headbroccoli, cut into florets, stalks diced up,
  • 1/2an onion, diced finely,
  • 1leek, washed, trimmed and cut into 1cm rounds,
  • Approx 2 tbsp Stilton cheese, left to ripen at room temperature,
  • 1/2 tbspunsalted butter,
  • 1heaped tablespoon garlic & herb cream cheese,
  • 300 mlmilk, (I used oat milk), plus an extra dash for end of recipe,
  • 1generous grating of nutmeg,
  • 1 tspwhite pepper,
  • 1 tbspvegetable oil for frying
  • Garnish:
  • Extra stilton, crumbled,
  • Cracked black pepper & salt to season
  • Equipment Needed:
  • 1hand or regular blender

Steps

30 mins
  1. 1

    Bring a large saucepan of salted water to the boil and add the broccoli florets/stalks and cover with a lid and boil until tender and a knife passes through the stalks easily. Drain off the water completely.

    Heat a large pan over a medium heat. Add in the oil. Once the oil is warm add in the onion & leek.

  3. 3

    Fry for a few minutes until buttery soft. Season with white pepper & a generous grating of nutmeg. Give everything a good stir up.

    Transfer the cooked broccoli to the pan. Add the butter. Once melted stir through the vegetable to coat. Pour in the milk and bring to a simmer. Simmer for around 6 mins to allow the flavours to come together. Crumble in the blue cheese and stir again. Simmer for another 2 minutes.

    Remove from the heat and allow to cool for a couple of mins. Add in the cream cheese and stir through until melted.

    Using a hand held blender, blend the soup until no lumps remain and it's beautifully smooth & thick in texture. To loosen up the consistency to your liking add an extra splosh of milk and stir through.

    Serve up whilst warm and crumble over a little more cheese as a garnish (if you'the like), and add some cracked black pepper & salt to taste. Crispy bacon bits also work great on top too instead of salt! Enjoy. :)
