Heat oil in a kadhai, add mustard seeds and fenugreek seeds. Let it crackle. Add curry leaves, and ginger grated. saute a little around 1 minute.

Soak tamarind in hot water and mash it up to get pulp.

Add chopped chillies in ginger, add turmeric and red chilli powder. Saute till fragrant.

Add chopped dates and tamarind pulp to it.

While cooking add salt and grated jaggery to it.a Add 1/2 cup of water.

Cook online flame till thick and dates are soft and cooked well.

Pickle is ready to enjoy. It can be stored for a long period in the refrigerator.
