Ingredients

Serves 6 servings
  1. 3.5 ozdried red chilies (about 100 grams)
  2. 2 tablespoonstomato ketchup
  3. 2 teaspoonsgrated ginger
  4. 2 teaspoonsgrated garlic
  5. 1 teaspoonsoy sauce
  6. 2 teaspoonssugar
  7. Juice of 1 lemon
  8. 1 teaspoonChinese five-spice powder
  9. 2 teaspoonsoil
  10. 1 cupwater (about 240 ml)

  1. 1

    Break the dried red chilies in half and remove all the seeds. Heat a little water and soak the chilies for 5 minutes.

  2. 2

    Blend the soaked chilies into a paste using a blender or food processor.

  3. 3

    Heat oil in a pan. Add the ginger and garlic paste and sauté. Add the red chili paste, salt, Chinese five-spice powder, soy sauce, sugar, lemon juice, and water. Mix well.

  4. 4

    Simmer the chutney on low heat for 10 to 15 minutes. Your Schezwan chutney is ready.
