I love to have these delicious parathas for my breakfast or at anytime of the day. These are good to carry in your lunch boxes too.
I am using black and green lentil here, but these can be made with any one gram alone too.

Ingredients

  1. ForBedmi Paratha dough-
  2. 2 cups whole wheat flour
  3. 5-6 tablespoonsurad dal/ dehusked black lentil
  4. 5-6 tablespoonsmoon dal/ dehusked green lentil
  5. 2-3green chillies
  6. 1 inchginger
  7. 2-3 tablespoonschopped coriander leaves
  8. 1teaspoon/ as per taste, Salt
  9. 1 teaspoongaram masala
  10. 1 teaspoonred chilli powder
  11. 1 teaspooncrushed fennel seeds
  12. 1 tablespoonoil
  13. For Mint chutney-
  14. 1 bunch or 1 cup mint leaves
  15. 1/4 cupcoriander leaves
  16. 1Juice of lemon
  17. 3-4 clovesgarlic
  18. 1 tablespoonjaggery
  19. as per tasteSalt as per taste
  20. For cooking Parathas-
  21. 1/2 cupwhole wheat flour for dusting
  22. 2-4 tablespoonsoil for roasting parathas

Cooking Instructions

    Soak the dals for 1-2 hours in water.

    Drain the water and take the dals, chillies, ginger in a mixer jar and grind to a coarse paste without using any water.

    In a large mixing bowl take flour and add salt, chilli powder, garam masala, coriander leaves and crushed fennel seeds and mix.

    Now add the dal paste and oil. Knead a semi-tough dough using little water.

  5. 5

    Apply a teaspoon of oil and keep the dough covered to rest for 10-20 minutes.

    Pinch a big lemon sized dough ball and roll out a thick circle. Apply few drops of oil, spread and fold into triangle.

    Roll out thin parathas.

    Heat a tawa, Apply oil or ghee and roast the Parathas.

  9. 9

    Flip the paratha and cook on other side as well. Apply some oil and roast on both sides evenly.

    For the chutney, add all the ingredients mentioned above in a grinder jar and grind to smooth paste. Delicious mint chutney is ready to enjoy.

    Serve the Bedmi Parathas hot, right out of the tawa, with chutney, curds or pickle.
