I don’t often share savory recipes—not because I don’t like them, but because I always have a hard time judging a recipe’s potential. I often feel like it’s 'too' simple to be worth posting, and I also find it harder to make them look good in photos.
Here’s one of my latest attempts: a Parmentier that’s a bit more original than usual. I made this recipe with cauliflower mash because I prefer foods with a low glycemic index, but a good mashed potato works perfectly too!

Ingredients

Serves 4 servings
  • 4fresh salmon fillets
  • 1large head of fresh broccoli (frozen works too, but it releases more water when cooking)
  • 1 clovegarlic
  • 2shallots
  • 1/2 headcauliflower for the mash (or 4 potatoes)
  • 1/2 cupplant-based milk or plant-based cream (about 100 mL) for the mash
  • Shredded cheese for topping (Parmesan, Swiss, Gruyère, etc.)
  • Salt, pepper, nutmeg

Steps

  1. 1

    Preheat the oven to 350°F (180°C).

  2. 2

    Peel the shallots and garlic. Thinly slice the shallots, then sauté them for 2 minutes in a hot skillet with a little oil or butter if needed.

    Add the broccoli florets and press the garlic through a garlic press into the pan. Season with salt and pepper, and cook for 2 to 3 minutes.

    Remove the skin and any bones from the salmon fillets. Slice them into pieces about 1/2 inch (1 cm) thick.

  5. 5

    In a greased baking dish, arrange the salmon evenly. Top with the broccoli, pressing down gently.

  6. 6

    Mash the cauliflower (or potatoes) using a potato masher or blender, depending on your preferred texture. Add the milk or cream, nutmeg, and season with salt and pepper.

  7. 7

    Spread the mash over the broccoli, then sprinkle with cheese for a delicious finish.

  8. 8

    Bake for 30 minutes, keeping an eye on it.
