Bedmi puri is famous street food of Uttar pradesh located in North India. They use to eat in breakfast or as evening snacks. There are many street vendors sell this bedmi puri with aaloo ki sabji. It's very easy to make.

Steps

Take urad daal and wash it. Let it dry and roast it. And roughly crush it.

Add garam masala, Asafoetida and fennel powader.

Add aamchur, salt and red chilli powder.

Add black salt, black pepper powder and water. Mix well.

Keep aside mixture of daal and let soak water. Check it after sometime if you feel it's dry add some water in it. We don't have flowing consistency we want consistency like we can make balls from it. You can see in photo texture of it.

Minwhile prepare dough for it.

For dough take all flours, carrom seeds, salt, ghee, oil and kasuri methi. Combine well and add water. Knead medium dough. Neither much hard nor much soft. Cover it and let it set.

After some time take dough. Make 1 small portion from it and make puri. Now put daal stuff on it. Cover it.

Now falten it on rolling board.

Deep fry it in hot oil till become brown.
