Mix the flour, potato starch, and water together, then add the chopped green onion and stir until smooth. (Adjust batter thickness as needed.)

Heat a pan with oil. Pour in the batter and cook until set to form a pancake. Remove and set aside.

In the same pan, pour in beaten eggs, then place the cooked pancake on top.

Cook until the egg is set and the pancake holds together. Flip the pancake, then add your favorite fillings, such as a slice of cheese and pork floss. Roll up the pancake with the fillings inside and cut into pieces.
