Classic Taiwanese breakfast: egg pancake made with a flour batter and eggs. You can use bread flour, all-purpose flour, or cake flour, but all-purpose flour is most commonly used. Choose according to your preference.

Recommended batter ratio:
Flour : Potato starch : Water = 4 : 1 : 8

Tip:
Adjust the amount of water to get your desired batter thickness. Thinner batter makes a thinner pancake, but it may tear more easily.

Ingredients

  • 1/3 cupcake flour (about 40 g)
  • 1 tablespoonpotato starch (about 10 g)
  • 1/3 cupwater (about 80 g)
  • 1green onion, chopped
  • 1 slicecheese
  • 2 tablespoonspork floss (about 10 g)

Steps

10 minutes
  1. 1

    Mix the flour, potato starch, and water together, then add the chopped green onion and stir until smooth. (Adjust batter thickness as needed.)

    Heat a pan with oil. Pour in the batter and cook until set to form a pancake. Remove and set aside.

    In the same pan, pour in beaten eggs, then place the cooked pancake on top.

    Cook until the egg is set and the pancake holds together. Flip the pancake, then add your favorite fillings, such as a slice of cheese and pork floss. Roll up the pancake with the fillings inside and cut into pieces.
