1/4 cupsun dried tomatoes (oil packed)
1/4 cupParmesan cheese

Steps

Cook chicken in olive oil on medium-high heat, season with salt and pepper. Once chicken is no longer pink inside remove from pan.

Reduce heat add sun defied tomatoes, mushrooms, spinach, cream, and Parmesan cheese and mix.

Add chicken back and simmer.

Serve with zucchini noodles, pasta or salad
