Curry for breakfast is a staple at our house. Whenever we make or buy a curry we always over order so we can have it for breakfast and lunch the next day (sometimes an extra day on top of that!). This morning we added some bacon and eggs to the pan and it was a revelation!

Ingredients

2 servings
  • Leftover curry
  • 2eggs
  • 2 rashersbacon

Steps

  1. 1

    Heat a large frying pan over a medium heat and add a little blob of oil.

  2. 2

    Add the bacon to the pan and fry for a couple of minutes and when it starts to brown, add the curry.

  3. 3

    Heat the curry through and then create two little holes for the eggs.

  4. 4

    Crack the eggs into the holes and fry until they are cooked how you like them. It’s a bit of a hybrid of fried and poached.

Trying this later. An old friend’s wife used to work at a curry place so we would hit the town and get a lift home. She’d bring loads of food with her when she finished and about half would get cooked up as part of breakfast. I remember it being shockingly good as a pairing. I’ll let you know!
