In a large mixing bowl, combine all the ingredients except the flour and mix with a whisk.

Gradually add the flour, mixing until you have a soft, pliable dough.

Shape the dough into a ball, place it back in the bowl, cover with plastic wrap, and let it rest for about 30 minutes.

While the dough rests, prepare the filling: Combine all the filling ingredients in a bowl and mix well with a whisk or spatula. If the filling is too runny, add a little more sugar.

Once the dough has rested, roll it out on your work surface into a rectangle.

Spread the filling evenly over the dough, roll it up into a log, and slice the log into pieces about two fingers thick using a serrated knife.

Place the slices on a baking sheet lined with parchment paper and let them rise for 10 minutes.

Bake in a preheated oven at 350°F (180°C) for about 25 minutes.

Remove from the oven, let cool completely, and dust with powdered sugar and cinnamon if desired.
