Put flour onto a clean work surface, make a large well in the middle

Break the eggs into the well and using a fork gradually mix the eggs slowly pulling the sides of the flour in.

When the flour and eggs become stiff, use your hands to knead it together until you have a firm smooth dough.

Wrap in cling film and leave to rest for 30 minutes.
