Clean the fish thoroughly, removing any blood. Use a toothpick to remove the bloodline along the backbone to eliminate any fishy smell. Soak the fish in lemon juice or vinegar water for 5-10 minutes.

Pat the fish dry, then marinate with MSG, sugar, fish sauce, and black pepper for 15 minutes.

In a pot, add cooking oil and sugar to make caramel sauce. When the sugar turns light brown, add garlic and shallots and sauté until fragrant (turn off the heat). Add the fish. Once the fish firms up, add water. When the water comes to a boil, season to taste (salty and sweet), then simmer until the fish is cooked through. Turn off the heat.

Serve with steamed rice. Sprinkle with black pepper and green onions. Take a piece of fish and some rice, and pour some of the braising sauce over the top. Sometimes, I even mix rice directly into the pot with the fish and eat it together! 😅😋
